The Dish – Meat Locker BBQ debuts near SDSU

Former executive chef and Slater’s 50/50 co-founder Brad Lyons is back in the barbecue seat with Meat Locker BBQ, a popular food truck found at events and breweries and also now popping up in the SDSU area. The menu is based on traditional Texas-style barbecue, smoked over white oak for 13 to 14 hours. The meats range from brisket and pulled pork to ribs and peppered turkey with house-made barbecue sauce. Side selections include coleslaw, potato salad, and macaroni and cheese, recipes handed down from his mother and aunt. Lunch is served in a casual picnic table setting from 11 a.m. to sell-out Monday through Friday. Lyons is in the process of designing his Fairmount location (5981 Fairmount Ave., San Diego) into a full time patio-seating eatery, which includes a full kitchen where he smokes the meat. Former Slater’s 50/50 Chef Debuts New Barbecue Spot

Slater’s 50/50 co-founder and former executive chef Brad Lyons is back in his comfort zone for Meat Locker BBQ, an in-demand food truck at events and breweries that’s also now a semi-permanent pop-up in the SDSU area. Lyons, who studied at La Cordon Bleu, calls himself a “barbecue nerd”; in 2016, he began hosting Sunday barbecue dinners at his Ocean Beach home to perfect his barbecue prowess.

Meat Locker BBQ Debuts in Menlo Park

Food for thought isn’t the only thing served at the Menlo Park Pace Gallery these days: Starting this week, its parking lot is also home to a Texas-style barbecue truck.

The Meat Locker truck debuted this Tuesday, March 7, at 350 El Camino Real. Owner Brad Lyons, whose two favorite culinary categories are barbecue and Italian, moved to the Bay Area several months ago after spending time researching barbecue, he said Thursday. He recently approached the Pace Gallery to use their parking lot to launch his truck.
